Giliberto’s moves next door, will open ice cream shop in original location

After serving breakfast in its original building this morning, Giliberto’s Mexican Taco Shop moved next door to its newly renovated home in time to serve lunch.

Next, work will begin to turn the first location at 712 S. Minnesota Ave. into a Mexican ice cream shop, said Ana Coconi, whose family owns the mostly regional chain of 10 restaurants. There are two other sites in Sioux Falls.

La Michoakanita likely will open in early spring, she said.

“Michoacan is the name of the Mexican state where the traditional Mexican ice cream comes from,” she said.

It’s made with “a lot of fresh fruit. We have a strawberry, lime, mango, pistachio; we have cherry, cookie monster, a lot of flavors with a lot of fruits.”

The ice cream shop also will serve popsicles and fresh fruit in bowls with toppings.

The new spot for the taco shop most recently was Wendy’s and features a drive-thru, which is a bonus for customers.

It has about the same amount of seating – 68 spots at tables and booths – but it’s roomier, Coconi said.

There’s also more room in the kitchen.

For now, the menu is the same. Coconi planned to start serving traditional al pastor, which is pork that’s cooked on a vertical rotisserie, but more changes will have to made in the kitchen.

Giliberto’s Mexican Taco Shop at 708 S. Minnesota Ave. is open 24 hours a day and only closes for Christmas Eve and Christmas Day, Coconi said.
