Plant-based restaurant coming to downtown

A plant-based restaurant is coming to downtown Sioux Falls.

‘Brosia Bowl, which operates a food truck at the Falls Park Farmers Market, will be in the Jones421 Building on North Phillips Avenue.

The restaurant will take over the former Swamp Daddy’s Cajun Kitchen space next week and hopes to open sometime in June. The current tenant, 605 Florista, which opened earlier this year, is moving in with nearby Sharing the Dream in Guatemala in the first-floor marketplace of the mixed-used building.

“It’s going to be just a really fast way to get a healthy meal,” said Darcy Green, who started ‘Brosia Bowl in 2019 with plant-based grain and salad bowls. Her business model began with online orders and delivery in Brookings and Sioux Falls, in addition to selling at the Brookings Farmers Market and other venues such as the SDSU convenience store.

She added the food truck late in the season last year and became a Falls Park Farmers Market vendor this year.

While Green is still finalizing her menu and hours for the restaurant, she’s envisioning serving breakfast and lunch Monday through Saturday.

She’ll offer some of her specialties such as the taco bowl and winter salad, but customers will be able to build their own meals. That includes grains, protein from legumes or meat substitutes, salad greens and fresh veggies.

“You can take any salad you want and make it a wrap,” Green said.

She’ll add panini presses to her equipment so she can make sandwiches.

For breakfast, there will be burritos, sandwiches and bowls, including a smoothie version. Green, who grew up in Sioux Falls, said she is excited about having a restaurant in Jones421.

“I’ve been trying to get in there for a couple years. I just love the community of it there. It’s full of small-business owners, and they all support each other, they all get along, they like each other.”

She knows that businesses such as Swamp Daddy’s and Papa Woody’s Wood Fired Pizza have grown into larger spaces either in the building or another downtown location.

“Downtown Sioux Falls is growing, and it’s such an awesome spot to get into. Businesses thrive in there. It’s kind of like a small-business incubator.”

When she started ‘Brosia Bowl, she envisioned it becoming a restaurant someday that would be similar to Qdoba or Subway where customers picked the ingredients for their meal.

“I would very much like to franchise it someday,” she said. Her other goal is “just to show people that vegan is no longer the ‘rabbit food’ that everyone used to know. It’s transitioned to be healthy and flavorable, a little more favorable. It’s come such a long way.”
