The Treasury starts cocktail service, prepares for grand opening

The Treasury, downtown’s newest cocktail bar and food lounge, is serving its first customers.

It’s located inside Hotel on Phillips, which is still under construction at 100 N. Phillips Ave. The Treasury is opening in stages, beginning with cocktail service.

“We want people to feel like it’s been here forever,” said Brian White, a partner in the business who also co-owns Carpenter Bar.

“It’s not meant to feel new and sparkly. It’s rich, and it hearkens back to an earlier time. But it’s still very current with modern touches.”

The decor is meant to be beautiful and imaginative, inspired by the historic building’s past as a bank, the owners said. Shades of subtle green complement the white and black marble, walnut and bird’s eye maple.

The original terrazzo tile floor remains. The space accommodates about 70 people with a mix of seating arrangements.

“We want it to be a place where travelers feel like they have discovered a beautiful piece of Sioux Falls and where locals can come enjoy outstanding food and cocktails in a setting unlike anything else in town,” White said.

The Treasury has started serving some of its cocktails and gradually will roll out its entire menu. Some signature beverages include the 100 Phillips, with Aviation American Gin, Gruet brut rose, Fee Brothers Cherry Bitters, lemon and sugar; and the Santa Marta, with St-Germain elderflower liqueur, Tattersall grapefruit crema liqueur, mint, lemon and soda.

There also is a selection of beer and wine available.

“We want to be a regional influencer in this industry, and a lot of care has been put into our menu development,” general manager Michael Mohr said. “We can’t wait to introduce it.”

Food will come a little later, as construction is still wrapping up in the kitchen. The plan is to add it when The Treasury holds its grand opening, which hasn’t been scheduled yet.

Executive chef Matthew Regnier, a restaurant industry veteran, has developed a menu designed to offer a little something for everyone, he said.

“You’ll find bar bites and small-plate options, but you’ll also be able to come in and have steak, chicken, a salad or a burger,” he said. “It’s never going to be a large menu, but it is a carefully curated selection of items with a focus on local, fresh and inventive cuisine.”

A temporary wall in the space will become a second entrance once the hotel lobby is open. Guests will be able to walk through the large bank vault and into the lounge.

The other entrance is open and can be accessed off Ninth Street across from The First National Bank in Sioux Falls.

The Treasury will open at 3 p.m. daily and expand with earlier hours once it starts a weekend brunch. The hotel has not set an opening date.
